looks like the issue was that the UUID get duplicated when the SD is cloned to SSD so even after partitioning and formatting the new partition it still acted up until I used fdisk to change the UUID.

SD card is hot swappable from my tests. With /etc/fstab entry the SD will auto mount at boot or the first time the card is hot inserted. I can manually mount/umount at will.

Are there any option to make it mount and unmount automatically as the card is inserted and removed?

That strongly suggests that, if you used the provided "SD Card Copier", you did not "tick" the "New Partition UUIDs" option** - something I almost always do ( Image may be NSFW.

Although somewhat tricky** with a P5 or P4B and much easier with a P400 (and, presumably the P500) once you're booting with the O.S. etc. on the SSD you can use the card slot as a card reader/writer. That also means you can access its CID info (and maybe decode it****) which may hint that that "bargain priced" uSD card may not have been quite what was implied by the packaging (eg. older than you thought it was).
