That's easily fixed: create a new file /etc/apt/sources.list.d/backports.list
Thanks a lot for that option.

What about switching to the normal `linux-image-arm64` kernel from Debian Stable? I would prefer the lack of change in Debian Stable if possible.
If the mainline Linux kernel gives you all the functions you need, then you could. No dtoverlays would probably be one of the biggest.
Whilst we do upstream patches to mainline, it is almost always a fair way behind our kernel branches.
