Last two hours I decided to give it another try with the Raspberry Pi 5 32bit version (first try). And it works just fine. Yes most of the time don't know what to do and read proper instructions... but managed to find the SD card test and run it. The test said FAILS.
So it seems that problem indeed might be the SD card, which I will check tomorrow with a brand new one.
I hope I will manage to find and tinker the solution I need - a private VPN server + dynamic DNS + remote access interface to manage port forwarding (VNC/anydesk) just in case the router resets itself, as it happens every 3-4 months.
