To read an array of analogue devices use analogue multiplexers to connect the row and column of each device in turn to an ADC.
You could use one transistor to switch a reference voltage to the rows (or columns) and a multiple input ADC to read the columns (or rows)
8 and 16 channel ADCs are readily available so you just have to switch the reference to the other side of the device
