Question: how does the current split so that only what is can be sinked by the GPIO enters the GND pin and the rest enters the negative of the power supply?
Current flows in loops ("circuit"). The current must be equal at each part of a loop. With only one wire between two loops, there is no way that current from one loop can get into another loop (barring stray capacitative or inductive effects at AC).
So the currents will add on pin 3 of the FET, but must separate into the correct ground wire.
