We do have an ITM for each processor. See section 3.5.7 (Processor Subsystem -> Debug -> Trace) for an overview of the trace hardware.
There is a common issue with the 3.7.2 feature listing which is: it describes Cortex-M33 feature enables as documented by Arm, and sometimes one feature enable gates multiple processor-level features to support external hardware. We had a similar query about MTB, because that is on the same feature enable as ETM.
